After 15 years working in the catering, Stefano Olivieri start teaching how to make pasta in Italy and abroad (Madrid, London, Portugal, Germany) matching his passions: travelling, kooking and teaching. In these years the chef work in different places talking about different themes till deciding to come back to its origin in Emilia Romagna. Here he decided to dedicate himself to an ancient tecnique, that of fresh Pasta.

He has been working for two years at DIEFFE in corsi professionali per Cuoco e Pasticcere. In the laboratory at Cosmofood we will realize together various type of pasta, using a handmade tecnique to do the "Tagliatelle" and a mechanical one using the "chitarra": an ancient instrument from Center Italy, used to prepare the famous “Spaghetti alla Chitarra”. Then we will prepare classic Tortelloni, ravioli learning how the changing of the fill, of the consistence, of the wight and the type of pasta can change the timing and the way you have to make the dough.

The meeting is on Saturday 14th November from 10 to 12 in courses room 1, Pavilion 7.
