The Dr. Annalisa Bettin, Biologist Nutritionist, Specialist in Food Science and Nutrition Master teaches at the University of Siena, involved those present on a topical issue: allergies and food intolerances. During the meeting, Dr. Bettin explained the difference between food allergy and intolerance, spoak about "biological families" and possible "cross-reactions" food. Focused on various allergies including those to wheat and milk, which are the most widespread, and on allergia to gluten (celiac disease); gave advice on a proper diet for those with such intolerance or allergy. Also highlighted the possible causes of the onset of these "phenomena" and how best to prevent them. In addition, the opportunity had been useful to present the book "The Intolerant," written by Dr. itself, in which the experience of a nutritionist is combined with that of a chef offering an analysis of intolerance and methods to treat them accompanied by a series of practical recipes and tasty.
