In the afternoon of Monday 18 November from 15h30 to 18h00, the Chef Gregori Nalon for the Angelo Po COmpany and the food technologist Gabriele Cirelli for the F.lli Pagani company presented some dishes created with new technological method of cooking without waste and with a great profitability.

The meeting was also the occasion to confirm the important role of meat in a proper nutrition in order to go over the gastronomic limits and reconsider the role of the butcher.
